今次介紹嘅蛋糕食譜啱曬冇焗爐嘅朋友 強烈建議大家落埋青檸皮 賣相靚啲之餘 食落嘅感覺仲fresh好多 This time I made a Passion Fruit & Mango Cheesecake at home. It is super tasty and best for people that do not have an oven! Try it out! It is fresh and sweet!

熱情果香芒芝士蛋糕食譜 Passion fruit & Mango cheesecake recipe (適用於6 inch可脫底圓形蛋糕模)

餅底製作 Base 消化餅 Biscuits: 4片 約60g
牛油 Butter: 40g 熱情果芝士糊 Passion fruit cream cheese mix 急凍熱情果蓉 Frozen passion fruit mix : 150g 糖 Sugar: 55g 魚膠片溶液 Gelatine: 3片 約8g 忌廉芝士 Cream cheese: 227g 淡忌廉 Whipped Cream: 200g 芒果粒 Mango: 適量 Little 裝飾 啫喱面 Delcoration 糖 Sugar: 5g 急凍熱情果蓉 Frozen passion fruit mix: 50g 魚膠片 Gelatine: 1片 約2.5g
芒果粒 Mango 適量 Little 青檸皮 Lime zest 適量 Little Steps 餅底 1. 將消化餅放入密實袋壓碎 (可以用攪拌機打碎) 2.將牛油溶液倒入袋攪勻 3.放入蛋糕模 用匙羹壓平 4. 放入雪櫃(完成芝士糊後拿出) -------------------- 蛋糕 1.預備一盆凍水,將3塊魚膠片剪成小塊放入凍水中浸至軟身 2.預備一盆熱水,瀝乾魚膠片水份後 , 隔水座溶 3.加入熱情果蓉再攪勻 4.將室溫芝士稍稍攪拌 5.加入砂糖攪勻,攪拌至順滑即可 6.將熱情果蓉分三次倒入忌廉芝士糊中攪勻 7.將淡忌廉打發至軟雪糕狀態 P.S.(凍的淡忌廉會較容易打發) 8.將已打發的淡忌廉分兩次加入芝士糊中攪拌至順滑即可 9.將餅底拿出 , 放一層芝士糊 10.加入芒果 , 再放另一層芝士糊 11.封上保鮮紙放入雪櫃雪三至五個鐘就可以啦! --------------------- 裝飾(啫喱面 ) 1.將50g熱情果蓉加入5g糖和2.5g浸至軟身的魚膠片隔熱水座溶 2.放涼後就可以倒在芝士蛋糕上(P.S.:蛋糕最好放雪櫃雪兩個鐘後才加入啫喱面) 3.放入雪櫃雪1至2個鐘即可 4.在表面放上芒果粒 , 灑上青檸皮(可不加)
Cake base 1. Put the digestive biscuits into a bag and crush it (you can crush it with a blender) 2. Pour the dissolved butter into the bag and mix evenly 3. Put them into the cake mold and flatten it with a spoon 4. Put it in the refrigerator (take it out after finishing the cream cheese batter) -------------------- Cream cheese batter 1. Prepare a basin of frozen water, cut 3 pieces of gelatine leaves into small pieces and soak into the frozen water until soft 2. Prepare a basin of hot water and dissolve the gelatine leaves 3. Add the frozen passion fruit mix and stir well 4. Stir the cream cheese (in room temperature) slightly
5. Add granulated sugar and stir well, stir until smooth 6. Pour the passion fruit mix into the cream cheese batter bit by bit and stir well 7. Whip the whipping cream until it turns to soft ice cream state 8. Add the whipped cream into the cheese batter and stir until it is smooth 9. Take out the cake base from refrigerator and put a layer of cheese batter
10.Add mango, then put another layer of cheese batter 11. Cover with plastic wrap and put it in the refrigerator for three to five hours! --------------------- Decoration 1. Add 5g of sugar into 50g of frozen passion fruit mix and add 2.5g of dissolved gelatine leaves, then wait until it cool down
2. Pour it on the top of the cheesecake 3. Put it in the refrigerator for 1 to 2 hrs 4. Put mango diced on the surface, sprinkle with lime zest (optional)
